Kingfish

A fish that is sustainably farmed, future-proof and exceptionally flavourful. In Zeeland, the high-quality Dutch Yellowtail (Seriola lalandi) is produced: an exclusive species with tropical roots, perfectly suited to the demands of modern gastronomy.
Since 2017, the Dutch Yellowtail has been farmed in an innovative, closed aquaculture system without the use of antibiotics. In spacious, controlled tanks, thousands of young fish grow up in a stress-free, clean environment. This sustainable method ensures consistent quality and minimal environmental impact. A responsible choice for any kitchen that works consciously.
The Dutch Yellowtail is related to mackerel, but is often compared to tuna in gastronomy. The flesh is firm, light pink and rich in healthy fats. Thanks to these qualities, the fish is extremely versatile: from raw preparations such as sashimi and ceviche to grilled and hot dishes with a refined flavour.
TIP: Serve the Dutch Yellowtail as sushi, sashimi, smoked, poached or grilled.
