Preparation

  1. Mix the melted butter with the brown sugar and vanilla bean paste.
  2. Add the melted dark chocolate at 40°C.
  3. Mix in the room temperature egg.
  4. Add all dry ingredients and mix until fully incorporated.
  5. Fold in the walnuts and both types of chocolate chunks.
  6. Cover the dough and let it rest in the refrigerator.
  7. Form 20-gram balls and flatten them in a ring with a diameter of 6.5 cm to achieve the correct cookie diameter.
  8. Freeze and store until assembly.

  1. Melt the dark chocolate to 45°C and the butter to 40°C. Mix both together.
  2. Whisk the eggs with the sugar and cream cheese until smooth.
  3. Mix the chocolate-butter mixture into the egg mixture.
  4. Add the sifted flour, cocoa powder, baking powder, and salt. Mix until you have a homogeneous batter.
  5. Pipe 40 grams of brownie batter into a silicone mold with a diameter of 7 cm and freeze.

  1. Place one frozen disc of walnut cookie on top of the frozen brownie batter.
  2. Bake for 15 minutes at 180°C.
  3. Let cool completely and store in an airtight container.
