The oyster mushroom is recognizable by its flat, fan-shaped cap, which ranges in color from light beige to light grey. The cap is about 5 centimeters wide. The mushroom has a small stem and clearly visible gills on the underside. The flesh has a tender texture and a mild, meaty flavor. Oyster mushrooms keep for about three days when refrigerated. Thanks to their meaty taste and texture, they are very suitable for use in vegetarian dishes. The oyster mushroom is also used in various Asian stir-fry dishes.
