Tips

Grease the waffle iron with PanCoating for the best result.
Bake at 160–170°C so the cheese melts nicely.
Use an ice cream scoop for equal portions of batter.
Dip the scoop in sunflower oil between portions to make it easier.
Waffles freeze well and can be reheated later in the oven or microwave. Then brush with herb butter again.
Add extra garnish to the basic batter, such as olives, dried tomato, ham, bacon or chorizo.

Crêpe griddle

Holy crêpe! Look who’s back: the irresistible classic crêpe Suzette! Thanks to the crêpe griddle, baking is quick and easy, with plenty of room for variation. No more ten pans on the stove: batter ready, and off you go!

Crêpe preparation tips:

Use PanCoating spray to grease the griddle.
Soak the wooden spreader in water for a moment: that works best and is easiest!
Use a long palette knife to turn the crêpe.
As for temperature: we work at 200°C–210°C to have enough time to bake and turn calmly. An expert? Then work at 220°C–230°C for a quick and extra crispy result.
For dessert crêpes, spread the batter a little thicker for a soft texture.

Hotpress tako senbei

At the food markets in Tokyo, we spotted wafer-thin octopus crackers: tako senbei. They are made in a special press with heated plates that close hydraulically, for ultra-thin, crispy crackers. Octopus is the favourite in Japan, but soft-shell crab, prawns, smelt or even edible flowers, courgette flowers, herbs and spices also give a spectacular result. The flavour is excellent and ideal to serve with the aperitif.

Three options

Option 1: Batter based on flour and cornflour or potato starch, or based on a batter mix.
Option 2: Rice paper: brush two sheets of rice paper with egg white, place the garnish on one sheet, press the second sheet on top and put in the press.
Option 3: Brick pastry: brush one sheet of brick pastry with egg white, place the garnish on top, press the second sheet on top and put in the press.
